Being able to edit many things at once is a sorely missing feature in most UIs.
Say I have a form on a webpage. Why can’t I copy/paste the entire form? Why can I only edit text in a single field at a time?

Because the text part is standardized as a medium, and the form part is not - there is not enough structure in the underlying substrate.

It’s possible to just treat it as a list of text fields with no other structure.
Spreadsheet programs do something like this.
